There is something incredibly satisfying about getting dinner sorted early in the day and then not having to think about it again until everyone is hungry.
School nights can be chaotic enough without having to come home and immediately work out what everyone is going to eat. Between school, work, clubs, homework, bath time and the general madness that comes with family life, sometimes the last thing you want to do is spend an hour standing over the cooker.
That is where the slow cooker comes into its own.

Slow cooker meals are brilliant for busy families because most of the preparation can be done earlier in the day. You can chop your ingredients, throw everything into the slow cooker, switch it on and get on with everything else. By dinner time, you have a warm, comforting family meal ready to serve.
And slow cooker recipes don’t have to mean the same casserole every week. From chilli and curry to pulled pork, bolognese and even mac and cheese, there are loads of easy family dinners you can make in a slow cooker.
I’ve put together some of my favourite slow cooker meals for busy school nights, with recipes designed to serve a family of four. I’ve included both LOW and HIGH cooking times, exact ingredient quantities, serving suggestions and some easy ways to change each recipe depending on what your family likes.
A few slow cooker tips before you start
Slow cookers vary slightly, so always use the manufacturer’s instructions alongside these recipes. Cooking times can vary depending on the size and model of your slow cooker.
As a general guide, LOW cooking usually takes around twice as long as HIGH cooking. If a recipe says 6–8 hours on LOW, it will generally take around 3–4 hours on HIGH.
Try not to keep taking the lid off while your food is cooking. Every time you lift the lid, heat escapes and it can add to the cooking time.
When using meat, make sure it is completely cooked before serving. Chicken should be cooked through with no pink meat remaining, and minced meat should be thoroughly cooked.
It is also worth remembering that vegetables can cook at different speeds. Root vegetables such as potatoes and carrots generally take longer than softer vegetables, so cut them into reasonably sized chunks rather than leaving them very large.
Now, onto the recipes.
1. Easy Slow Cooker Chicken Casserole
Chicken casserole is one of those dinners that feels like proper comfort food without requiring loads of effort.
You can prepare everything in the morning, switch the slow cooker on and come back to a hearty dinner. It is particularly good on cold or rainy evenings when you want something warming and filling.
Serves: 4
Prep time: 15 minutes
LOW: 6–8 hours
HIGH: 3–4 hours
Ingredients
- 600g boneless, skinless chicken thighs
- 3 large carrots, peeled and sliced
- 2 medium potatoes, peeled and cut into chunks
- 1 large onion, chopped
- 2 sticks of celery, sliced
- 2 garlic cloves, crushed
- 500ml chicken stock
- 1 tablespoon tomato purée
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1 tablespoon Worcestershire sauce
- Salt and black pepper
- 1 tablespoon cornflour
- 2 tablespoons cold water
Method
Add the chicken thighs, carrots, potatoes, onion, celery and garlic to the slow cooker.
Pour over the chicken stock and add the tomato purée, thyme, parsley and Worcestershire sauce. Season with salt and pepper.
Give everything a good stir, place the lid on and cook on LOW for 6–8 hours or HIGH for 3–4 hours.
When the casserole is cooked, mix the cornflour with the cold water to make a smooth paste. Stir this into the casserole and leave it for another 10–15 minutes with the lid on to thicken the sauce.
Check the chicken is cooked through before serving.
Ways to serve it
This is lovely served with creamy mashed potato and some green vegetables. You could also serve it with crusty bread for mopping up the gravy, rice or simple boiled potatoes.
Easy variations
You can swap the chicken thighs for chicken breast, although thighs tend to stay particularly tender in the slow cooker.
For extra flavour, add a handful of mushrooms or some chopped bacon. You could also add frozen peas towards the end of cooking.
2. Easy Slow Cooker Chilli
Chilli is one of my favourite busy-family dinners because it is incredibly versatile.
Make one batch and you can serve it several different ways, which is particularly handy if you have family members who like different things.

LOW: 6–8 hours
HIGH: 3–4 hours
Ingredients
- 500g beef mince
- 1 large onion, chopped
- 2 garlic cloves, crushed
- 1 red pepper, chopped
- 1 x 400g tin chopped tomatoes
- 1 x 400g tin kidney beans, drained and rinsed
- 2 tablespoons tomato purée
- 150ml beef stock
- 2 teaspoons mild chilli powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- Salt and black pepper
Method
Brown the beef mince in a frying pan over a medium-high heat, breaking it up as it cooks. Drain any excess fat.
Add the mince to the slow cooker along with the onion, garlic and red pepper.
Add the chopped tomatoes, kidney beans, tomato purée and beef stock.
Sprinkle in the chilli powder, cumin, smoked paprika and oregano, then season with salt and pepper.
Stir everything together and cook on LOW for 6–8 hours or HIGH for 3–4 hours.
Give it a good stir before serving and check the seasoning.
Ways to serve it
Serve with rice, tortilla chips, grated cheese and a spoonful of sour cream or natural yoghurt.
It is also brilliant with jacket potatoes, in wraps or spooned over chips for a completely different dinner.
Easy variations
For a milder family version, reduce the chilli powder or leave it out altogether and allow adults to add extra chilli at the table.
You can also add sweetcorn, extra peppers or a tin of black beans.
3. Slow Cooker Pulled Pork
Pulled pork is another recipe that gives you a lot of food for relatively little effort.
It is particularly useful if you like having leftovers because the cooked pork can be transformed into completely different meals over the following couple of days.

LOW: 8 hours
HIGH: 4–5 hours
Ingredients
- 1kg boneless pork shoulder
- 1 large onion, sliced
- 3 garlic cloves, crushed
- 250ml chicken stock
- 150ml barbecue sauce
- 1 tablespoon Worcestershire sauce
- 1 tablespoon brown sugar
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- Salt and black pepper
Method
Place the sliced onion and garlic in the bottom of the slow cooker.
Put the pork shoulder on top.
Mix together the chicken stock, barbecue sauce, Worcestershire sauce, brown sugar, smoked paprika and oregano. Pour this over the pork.
Season with salt and pepper.
Cook on LOW for around 8 hours or HIGH for 4–5 hours, until the pork is tender and pulls apart easily with two forks.
Remove the pork from the slow cooker and shred it with two forks. Return it to the sauce and stir everything together before serving.
Ways to serve it
Serve in burger buns with homemade coleslaw and salad, or pile it into wraps with lettuce, cheese and barbecue sauce.
It is also delicious with chips, potato wedges or corn on the cob.
Easy variations
You can use the leftovers for loaded fries, sandwiches, jacket potatoes or quesadillas.
For a slightly sweeter barbecue flavour, add another tablespoon of brown sugar. For a smokier version, increase the smoked paprika.
4. Slow Cooker Bolognese
A good bolognese is a family classic, and making it in the slow cooker gives the flavours plenty of time to develop.
It is also a brilliant meal to batch cook, meaning you can freeze leftovers for another busy night.

- 500g beef mince
- 1 large onion, finely chopped
- 2 carrots, finely diced
- 2 sticks celery, finely diced

- 2 tablespoons tomato purée
- 150ml beef stock
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon Worcestershire sauce
- Salt and black pepper
Method
Brown the beef mince in a frying pan, breaking it up as it cooks. Drain any excess fat.
Add the mince to the slow cooker along with the onion, carrots, celery and garlic.
Pour in the chopped tomatoes and beef stock.
Add the tomato purée, oregano, basil and Worcestershire sauce. Season with salt and pepper.
Stir well, cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours.
Cook your pasta separately according to the packet instructions and serve with the bolognese.
Ways to serve it
Spaghetti is the obvious choice, but you could also use penne, fusilli or tagliatelle.
Add grated cheese on top and serve with garlic bread and a simple side salad.
Easy variations
You can add mushrooms, courgette or peppers to increase the vegetables.
For a lighter version, replace some of the beef mince with red lentils.
The finished sauce can also be cooled and frozen in portions for another day.
5. Slow Cooker Sausage Casserole
Sausage casserole is one of those meals that feels like a proper family dinner without being complicated.
It is filling, inexpensive and ideal for those evenings when you want something hearty.

Ingredients
- 8 pork sausages
- 1 large onion, sliced
- 3 carrots, sliced
- 1 red pepper, chopped
- 2 garlic cloves, crushed
- 1 x 400g tin chopped tomatoes
- 300ml chicken or vegetable stock
- 2 tablespoons tomato purée
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- 1 tablespoon Worcestershire sauce
- Salt and black pepper
Method
Brown the sausages in a frying pan for a few minutes until they have some colour. They do not need to be completely cooked through at this stage.
Place the sausages into the slow cooker.
Add the onion, carrots, pepper and garlic.
Pour over the chopped tomatoes and stock, then add the tomato purée, smoked paprika, thyme and Worcestershire sauce.
Season with salt and pepper.
Cook on LOW for 6–8 hours or HIGH for 3–4 hours.
Ways to serve it
Serve with mashed potato, rice or crusty bread.
You could also serve it alongside steamed vegetables for a simple, filling dinner.
Easy variations
Chicken sausages work really well if you prefer them.
You can also add butter beans or cannellini beans to bulk out the casserole and make it go further.
6. Easy Slow Cooker Chicken Curry
You don’t need a takeaway when you can make a simple chicken curry in the slow cooker.
This version is deliberately mild, making it suitable for a family dinner while still having plenty of flavour.

HIGH: 2½–3½ hours

- 600g boneless chicken thighs or breast
- 1 large onion, sliced
- 2 garlic cloves, crushed
- 1 red pepper, chopped
- 400ml tin coconut milk
- 2 tablespoons mild curry powder
- 1 tablespoon tomato purée
- 150ml chicken stock
- 1 teaspoon ground cumin
- 1 teaspoon turmeric
- 1 tablespoon mango chutney
- Salt and black pepper
Method
Place the chicken, onion, garlic and red pepper into the slow cooker.
Add the coconut milk, curry powder, tomato purée, chicken stock, cumin, turmeric and mango chutney.
Season with salt and pepper and stir everything together.
Cook on LOW for 5–6 hours or HIGH for 2½–3½ hours.
Check the chicken is cooked through before serving.
Ways to serve it
Serve with basmati rice, naan bread or poppadoms.
You could also add a simple cucumber and tomato salad for some freshness alongside the curry.
Easy variations
For a creamier curry, stir through a little extra coconut milk at the end.
You can add peas or spinach during the final 20–30 minutes of cooking.
For adults who like more spice, add fresh chilli or chilli flakes to individual portions rather than making the whole family meal spicy.
7. Slow Cooker Beef Stew
Beef stew is the definition of comfort food.
The slow cooker is particularly good for cheaper cuts of beef because the long, slow cooking process helps make the meat tender.

LOW: 7–8 hours
HIGH: 4–5 hours
Ingredients
- 700g diced beef
- 1 large onion, chopped
- 3 carrots, sliced
- 2 large potatoes, cut into chunks
- 2 sticks celery, sliced
- 2 garlic cloves, crushed
- 500ml beef stock
- 2 tablespoons tomato purée
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 tablespoon cornflour
- 2 tablespoons cold water
- Salt and black pepper
Method
Place the diced beef, onion, carrots, potatoes, celery and garlic into the slow cooker.
Pour over the beef stock.
Add the tomato purée, Worcestershire sauce, thyme and rosemary, then season well.
Stir everything together and cook on LOW for 7–8 hours or HIGH for 4–5 hours.
When the stew is cooked, mix the cornflour with cold water and stir it into the slow cooker.
Replace the lid and cook for another 10–15 minutes until the sauce thickens.
Ways to serve it
Because the stew already contains potatoes, it can be served as it is with some crusty bread.
If you want something extra, serve it with mashed potato, dumplings or steamed green vegetables.
Easy variations
Add mushrooms, peas or swede depending on what vegetables you have available.
You can also leave out the potatoes and serve the stew over mashed potato instead.
8. Slow Cooker Mac and Cheese
Mac and cheese might not be the first thing you think of when you think about a slow cooker, but it can make a great easy family dinner.
It is particularly useful for those nights when you want something quick and comforting rather than a big meal with lots of different components.

Prep time: 10 minutes
LOW: 2–3 hours
HIGH: 1–1½ hours
Ingredients
- 300g dried macaroni
- 400ml evaporated milk
- 300ml whole milk
- 250g grated mature cheddar
- 50g cream cheese
- 1 teaspoon English mustard
- ½ teaspoon garlic granules
- Salt and black pepper
Method
Add the macaroni to the slow cooker.
Pour over the evaporated milk and whole milk.
Add the cream cheese, mustard and garlic granules, then season with salt and pepper.
Stir well.
Cook on LOW for around 2–3 hours, stirring occasionally. Keep an eye on it towards the end because pasta can become overcooked quite quickly.
Once the pasta is tender, stir in the grated cheddar and leave for another 10–15 minutes until melted and creamy.
Ways to serve it
Serve it with peas, broccoli or sweetcorn for some added vegetables.
You could also serve it with a simple side salad.
Easy variations
Add cooked bacon, ham or shredded chicken for extra protein.
You could also stir through cooked broccoli or spinach towards the end.
For a stronger cheese flavour, replace some of the cheddar with Red Leicester or Parmesan.
9. Slow Cooker Taco Chicken
If your family enjoys fajitas or tacos, this is one of the easiest slow cooker meals to have up your sleeve.
The chicken cooks in a simple seasoned sauce and can then be used in loads of different ways, making it another great option for leftovers.

LOW: 5–6 hours
HIGH: 2½–3½ hours
Ingredients
- 600g boneless, skinless chicken breasts
- 1 red pepper, sliced
- 1 onion, sliced
- 1 x 400g tin chopped tomatoes
- 150ml chicken stock
- 2 teaspoons mild chilli powder
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon garlic granules
- Juice of 1 lime
- Salt and black pepper
Method
Place the chicken breasts in the slow cooker.
Add the sliced pepper and onion.
Pour over the chopped tomatoes and chicken stock.
Add the chilli powder, smoked paprika, cumin and garlic granules.
Season with salt and pepper and squeeze over the lime juice.
Cook on LOW for 5–6 hours or HIGH for 2½–3½ hours.
Once cooked, shred the chicken using two forks and stir it back through the sauce.
Ways to serve it
This is where this recipe becomes particularly useful.
Serve the chicken in soft tortillas with lettuce, grated cheese, tomato and sour cream.
You could also serve it over rice, alongside wedges or as part of a taco-style salad bowl.
Easy variations
Add sweetcorn or black beans to the slow cooker.
You could also use the leftovers in quesadillas, wraps, jacket potatoes or sandwiches.
If your family likes things spicy, add fresh chilli or hot sauce to individual portions.

How to Make Slow Cooker Dinners Even Easier
The biggest advantage of slow cooking is being able to get ahead.
If you know you have a particularly busy evening coming up, prepare your ingredients the night before. Chop your vegetables, measure out your spices and get your meat ready so that in the morning you simply have to put everything into the slow cooker.
You can also prepare certain recipes in advance and freeze them. Bolognese, chilli and pulled pork are particularly useful for batch cooking.
Another thing I love about slow cooker meals is that leftovers don’t have to mean eating exactly the same dinner twice.
Leftover chilli can become loaded jacket potatoes. Pulled pork can become wraps or loaded fries. Taco chicken can become quesadillas or rice bowls. Bolognese can be turned into a pasta bake.
This is a great way to save money and reduce food waste at the same time.
Can You Put Raw Meat in a Slow Cooker?
Yes, raw meat can be cooked in a slow cooker, provided the recipe and cooking time allow it to cook thoroughly.
Some recipes suggest browning meat first. This isn’t always essential for safety, but it can add extra flavour and colour to the finished dish. For recipes such as chilli, bolognese and sausage casserole, I tend to think the extra few minutes are worth it.
Always make sure meat is completely cooked before serving and follow the food-safety guidance for your particular ingredients.
What Is Better: LOW or HIGH?
Neither setting is automatically better.
LOW is ideal when you are going to be out for most of the day and want dinner to cook slowly while you’re getting on with everything else.
HIGH is useful when you haven’t managed to get dinner started until later and need the meal ready in a shorter amount of time.
For many stews and casseroles, I prefer LOW because the longer cooking time can produce lovely tender meat and well-developed flavours.
However, HIGH is absolutely useful for those genuinely hectic days when you haven’t planned quite as far ahead as you’d hoped.
Easy Slow Cooker Meal Planning for a Family of Four
If you want to make slow cooking part of your regular family routine, you don’t need to plan seven completely different recipes every week.
Instead, choose three or four slow cooker meals and fill the gaps with easy dinners such as jacket potatoes, pasta, omelettes or leftovers.
For example, you could have chicken casserole on Monday, leftover chicken turned into wraps on Tuesday, slow cooker chilli on Wednesday and pasta or sandwiches on Thursday.
Planning this way can make the weekly food shop easier too, because you know exactly what ingredients you need before you head to the supermarket.
It can also help keep the food budget under control because you’re less likely to find yourself reaching for an expensive takeaway simply because you don’t know what to cook.
Final Thoughts
There is a reason slow cookers have remained so popular with families. They make dinner easier without requiring you to rely on complicated recipes or spend hours in the kitchen.
