Bread Pudding Recipe

The other day, I noticed that we had quite a bit of bread left, that would probably go to waste with just the two of us, so I started researching recipes for Bread Pudding & came across this one on the BBC Good Food website & thought I’d give it a go…

For this recipe you will need:

500g white or wholemeal bread

500g / 1lb 2oz mixed dried fruit

85g mixed peel

1 1/2 tbsp mixed spice

600ml milk

2 large eggs, beaten

140g light muscovado sugar

zest 1 lemon (optional)

100g butter, melted

2 tbsp demeara sugar

Step 1

 

Tear the bread into a large mixing bowl & add the fruit, peel & spice. Pour in the milk, then stir or scrunch through your fingers to mix everything well & completely break up the bread. Add eggs, muscovado & lemon zest if using. Stir well, then set aside for 15 minutes to soak.

Step 2

Heat oven to 180C/160C fan/ gas 4. Butter and line the base of a 20cm non-stick square cake tin (not one with a loose base). Stir the melted butter into the pudding mixture, tip into the tin, then scatter with demerara. Bake for 1 1/2 hours until firm & golden, covering with foil if it starts to brown too much. Turn out of the tin and, cut into squares & serve warm.

This recipe was so easy to do and the bread pudding tasted amazing. I’d love to know if you have a go too

  4. I’ve never had bread pudding in my life! I’ve never thought it sounded particularly appealing but my boyfriend absolutely loves it so I’d be willing to give it a go! Perfect way to use up leftover bread!

  7. Ooo yes. My mum always used to make bread pudding, I don’t think I’ve had it since I left home 10 years ago. We always have leftover bread, so I might have a bash at making it, see how it goes 😬
